This month is: Fresh Fruit Tart with Vanilla Mascarpone Cream
It was pretty easy to make. I was a bit concerned about my tart pan, which does not have a removable base. But I buttered it pretty well and it came out with no issue.
The cream filling was easy as well. I used my hand mixer as opposed to my KitchenAid, as it was only 1/2 cup of cream. Didn’t take too long (3ish minutes) and I did it while cooking rice for dinner.
I never know what I’m going to put on tarts (I have a custard based recipe that I make every now and then. It is amazing). I worry about my creativity, but once I get going, it turns out pretty well.
I used Kiwi, Strawberries and Blueberries. I also had peaches that were not quite ripe, cherries and honey mangoes that I completely forgot about.
It tastes really good, a nice light cream as opposed to the heavier (to me) custard.
